Orange Lamb Tenderloins

Ingredients (Serves 4)

600g lamb tenderloins*
2 Oranges, juiced
Zest of 1/2 Orange
2 clove garlic, peeled
1 Tbs Balsamic vinegar
1 Tbs Oregano leaves, chopped
1 Teaspoon of brown mustard seeds, lightly bruised
Extra virgin olive oil, cold pressed

Directions
1. Place Lamb,orange juice ,zest, galic, vinegar, oregano, and mustard seeds in a shallow dish. Marinate for 1 hour in refrigerator.
2. Heat a lightly oiled frying pan on a medium to high heat.
3. Add tenderloins and cook for 2 minutes each side or until cooked to your liking.
4. Add marinade and cook for a further 1 minute.
5. Remove from heat and allow to stand for 5 minutes
Delicious served with eggplant and Coriander Salad
