Lamb Fillets with Cauliflower Tabbouleh

Preparation time 5-8 minutes – Cooking time 4-6 minutes

Ingredients (Serves 1)

*160g lamb fillet

Zest & juice of ¼ lemon

Salt & pepper

*120g of cauliflower lightly steamed for 2-3 minutes & chopped into very small florets

½ cup of continental parsley finely chopped

½ cup of mint finely chopped

*2 shallots chopped

2 tablespoons of Pureblend Dukkah

2 tablespoons Tahini

½ lemon juiced

Method:

  1. Rub lamb fillet with the ¼ lemon zest & juice, salt & pepper & set aside to allow flavors to infuse.
  2. Heat a lightly oiled fry pan or grill plate on a high heat, cook lamb for 2-3 minutes each side, or until cooked to your liking. Cover fillet and allow to rest.
  3. Slice lamb fillets just before serving

Tabbouleh Method:

  1. Combine all remaining ingredients in a mixing bowl & toss. Season to taste.
