Mediterranean Octopus Salad

Ingredients (Serves 2)

250g cleaned baby octopus*
2 teaspoons of apple cider vinegar*
3 cups of water
2 cloves of garlic crushed
100g of red capsicum finely diced*
1 tomato diced (approx 100g)*
1 teaspoon of EatSlim Mexican Spice
1 tablespoon of EatSlim Chilli Sauce

Directions
Cooking time 20 minutes

1.Cut octopus into halves. Place octopus and vinegar in a saucepan, cover with 2 cups of water and simmer for 20 minutes or until octopus is soft.
2. Drain water and put octopus aside.
3. Meanwhile pan-fry garlic and capsicum for 1 minute, stirring.
4. Add tomato, EatSlim Mexican Spice Blend and 1 cup of water.
5. Simmer until the water has evaporated and capsicum is soft.
6. Mix through baby octopus, EatSlim Chilli Sauce and serve with remaining allowance of green salad.

Note: To increase servings to include the rest of the family simply times ingredients by how many servings are required.
