Mexican Quesadillas With Cheese

Ingredients (Serves 1)

1 clove of garlic, crushed
1 teaspoon of EatSlim Mexican Spice Blend
1 teaspoon of EatSlim Chilli Sauce
1 tablespoon of finely chopped onion*
70gms of finely chopped red and green capsicum*
1/2 a tomato finely chopped*
60gms of tasty cheese grated*
1 slice of Mountain Bread
* Adjust weight to your portion size
Directions
Cooking time 10 minutes
1. Heat a lightly oiled heavy based fry pan over medium heat.
Add garlic and onion & cook while stirring until onion is soft.
2. Add EatSlim Mexican Spice Blend, EatSlim Chilli Sauce, capsicum and tomato. Reduce to a low heat and simmer covered for 5 minutes stirring occasionally to avoid mixture from sticking.
3. Spread mixture evenly over half the mountain bread, sprinkle with the cheese and top with remaining
mountain bread.
4. Place on heated sandwich press or lightly oiled fry pan and cook until browned on both sides and cheese
has melted. Serve immediately.
