Celery Soup

Ingredients
Preparation time 10-15 minutes
1 Bunch of Celery, roughly chopped
1 Onion
500ml Good quality, low sodium Chicken or Vegetable stock
1 Bay Leaf
Salt and Pepper to taste
Method:
- Heat pan and spray lightly with Olive Oil. Lightly sweat onion until clear. Add celery, cook for 3 minutes
- Add stock, bay leaf, bring to simmer. Cook Slowly for 15 mins
- Remove Bay Leaf, puree in food processor until smooth
- Bring back to boil and season to own taste
- Put soup in bowl and serve
