Green Goodness Nourish Bowl
Ingredients (Serves 1)
Preparation time 5-8 minutes
Dressing:
1 clove Garlic, Minced
1/2 Tbs Ginger, Mined
1 tbs Lime Juice
1 tsp Red Chilli, Seed and membrane removed, finely diced
1 tsp Green Chilli, Seeds and membrane removed, Finely diced
1 Tbs Cold Pressed Extra Virgin Olive Oil
Protein:
75g Chickpeas, drained and rinsed
Vegetables:
80g Broccoli, florets
20g Zucchini, Sliced on angle
20g Green Capsicum Sliced
20g Snow Peas
1 Spring Onion, thinly sliced
1/4 cup Celery, sliced
Handful, Baby Spinach
1/4 Cup Flat Leaf Parsley, Chopped
1/4 Cup Coriander, Chopped
Seeds:
1/2 tbs Sunflower Kernels
1/2 tbs Pepita’s
1/2 tbs Seseme Seeds
Directions
1. Combine all ingredients for dressing in a morter and pestle. Grind well and set aside
2. Steam Broccoli and Zucchini
3. Assemble bowl. Start with chickpeas and chunkier veggies and add lighter leafier ones towards the top.
4. Sprinkle with seeds and coat with dressing
