Mexican Burrito Bowl

Ingredients (Serves 2)

150g Sweet Potato
260g Minced beef
1 Brown Onion
1 ½ clove Garlic, crushed
½ Bunch of coriander, chopped
1 Lime, cut in wedges
1 cucumber finely diced
2 tomato’s finely diced
½ red capsicum finely diced
2 Shallots thinly sliced
1tbs Extra Virgin Olive Oil
¼ Avocado
2 pieces Mountain bread
Spices:
1/2tbs Chilli Powder
1 tbs Ground Cumin
1 tsp Smoked Paprika
½ tsp Red Chilli Flakes
¼ tsp Dried oregano
Pinch of Salt and pepper

Directions:

  1. Preheat Oven at 180. Peel and cut sweet Potato into small cubes, place on a lined baking tray and spray with Extra Virgin Olive Oil. Bake for 15 mins or until crispy. Set aside when done.
  2. Cook mince, 1 clove garlic, onion and spices in a frying pan on a medium heat. Set aside when done.
  3. Create a salsa salad but finely dicing tomatos, cucumber and capsicum and placing in a bowl. Add sliced shallots, ½ clove crushed garlic, roughly chopped coriander, lime juice and Olive Oil. Toss through.
  4.  To serve, add sweet potato, minced beef, and salsa salad to a bowl, keeping the different elements in sections. Add Sliced Avocado, and toasted Mountain Bread and lime wedge

NOTE: This recipe can be made Vegetarian/ Vegan friendly by replacing beef with red Kidney Beans
