Mini Breakfast Frittata’s

Preparation time 5-8 minutes – Cooking time 10-15 minutes

Ingredients (Serves 4)

100g Sweet Potato, grated
150g Zucchini, grated
200g Kale, finely chopped
2 Spring Onions, sliced
Salt and Pepper (pinch)
½ cup Parsley, finely chopped
4x eggs, whisked

Directions
Cooking time 10-15  minutes

  1. Preheat oven 180˚ C and line large muffin trays with baking paper cut into squares.
  2. Combine all ingredients in a mixing bowl.
  3. Spoon mixture into muffin trays.
  4. Bake in oven for 15-20 mins or until cooked through.
  5. Set aside and allow to cool before serving.
