Ingredients (Serves 4)
Preparation time 15 minutes
1 tablespoon ground coriander
2 cloves garlic peeled and crushed
1 tbls ground cumin
1 tsp ground turmeric
1 tsp dried mint
1 tsp fresh ginger finely grated
1 long read chilli seeded and finely chopped
500g chicken breast diced
1 tbs olive oil, cold pressed
¼ brown onion, sliced
200g broccoli florets
2/3 cup Celery
100g baby bok choy
80g Snow peas
80g Capsicum, sliced
80g Zucchini, sliced
80g Mushrooms, sliced
1/3 Cup of Water
Directions
Cooking time 10-15 minutes
- Combine coriander, garlic, cumin, turmeric, mint, ginger, chilli and chicken in a bowl. Cover and allow to sit in refrigerator for 1 hour.
- Heat olive oil in a wok or large heavy based frying pan on medium to high heat. Add chicken, stir fry until browned
- Add onion, capsicum, mushroom, snow peas, broccoli to pan and stir fry. Add water. Reduce heat, cover and let simmer for 2-3 mins.
- Fold through bok choy and zucchini, cover for 1 min.
- Serve immediately
