Spiced Chicken Stir Fry

Ingredients (Serves 4)
Preparation time 15 minutes
1 tablespoon ground coriander
2 cloves garlic peeled and crushed
1 tbls ground cumin
1 tsp ground turmeric
1 tsp dried mint
1 tsp fresh ginger finely grated
1 long read chilli seeded and finely chopped
500g chicken breast diced
1 tbs olive oil, cold pressed
¼ brown onion, sliced
200g broccoli florets
2/3 cup Celery
100g baby bok choy
80g Snow peas
80g Capsicum, sliced
80g Zucchini, sliced
80g Mushrooms, sliced
1/3 Cup of Water

Directions
Cooking time 10-15 minutes

  1. Combine coriander, garlic, cumin, turmeric, mint, ginger, chilli and chicken in a bowl. Cover and allow to sit in refrigerator for 1 hour.
  2. Heat olive oil in a wok or large heavy based frying pan on medium to high heat. Add chicken, stir fry until browned
  3. Add onion, capsicum, mushroom, snow peas, broccoli to pan and stir fry. Add water. Reduce heat, cover and let simmer for 2-3 mins.
  4. Fold through bok choy and zucchini, cover for 1 min.
  5. Serve immediately
