Spinach and Ricotta Triangles

Ingredients (Serves 4)

¼ brown onion, diced
2 cloves garlic- peeled and crushed
2 tbs fresh dill chopped
500g spinach, steamed
300g ricotta cheese
Extra Virgin Olive oil, cold pressed spray
4 slices mountain bread
Sea salt and pepper, Pinch

Directions
Cooking time 20-25 minutes

  1. .Preheat oven 200˚ C
  2. In saucepan over medium heat, Sauté onion, garlic, dill and spinach for 3 mins.
  3. Transfer into a bowl and allow to cool.
  4. Add ricotta, salt and pepper, stir through.
  5. Cut mountain bread in long strips (about 3 per bread) and place a dollop of mixture at the base of the strip of mountain bread and fold in a triangle. Repeat.
  6. Place triangles on a baking tray, lightly spray with olive oil and bake for 15-20 mins
