Summer Green Bean Salad with Tofu

Preparation time 7 minutes – Cooking time 3 minutes

Ingredients (Serves 1)

60g of Tofu*
100g of Green beans*
50g of Cherry tomatoes*
Mixed lettuce
1/2 Lebanese cucumber
1 tablespoon of EatSlim Dukkah
1 tablespoon of EatSlim Balsamic Dressing

* Adjust weight to your portion size

Directions
Cooking time: 3 minutes

1. Heat a Lightly oiled frying pan over medium heat.
2. Gently cut tofu into 1cm thick slices and panfry both sides until golden.
3. Blanch beans and cut cherry tomatoes in half. Toss beans, tomatoes, lettuce, & sliced cucumber together.
4. Arrange on the serving plate and top with tofu.
5. Sprinkle over EatSlim Dukkah and drizzle with EatSlim Balsamic Dressing.
