80g Sweet Potato
75g Chickpeas, Drained and rinsed
1 Tbs Extra Virgin Olive Oil, Cold Pressed
1 clove garlic, peeled and crushed
1Tbs Tahini Paste
Pinch of Salt and Pepper
Directions
1. Chop Sweet Potato into small chunks and steam or roast until soft.
2. Combine chickpeas, sweet potato, garlic, Olive Oil, Tahini and salt and pepper in food processor on low setting for 1 min. Then blitz on high to form the desired consistency (you can add water as needed to make dip thinner)
Serving Suggestions:
1. Drizzle with olive oil and sprinkle Dukkah and seeds over the top.
2. Serve with chopped veggies: i.e Capsicum, zucchini, carrots, celery, cucumber, snow peas, green beans.
3. Use as base with veggies/salad on mountain bread to create a yummy wrap.
