Sweet Vegetable Curry

Ingredients:

Extra Virgin Olive oil, Cold Pressed
2 Apples, Peeled, cored and chopped
Small piece of chopped ginger, peeled and grated
4 Shallots, finely sliced
1 green chilli, seeded and chopped
¼ teaspoon Ground Cardamon
1 teaspoon Garam Masala
1 tablespoon Curry Powder
1 teaspoon Tumeric
1 lemon, juiced
2 cups, vegetable stock
100g baby spinach leaves
150g Zucchini, Chopped
150g Eggplant, chopped
150g Cauliflower florets chopped
300g Ricotta cheese

Method:

  1. In a lightly oiled, heavy based large saucepan, combine apples, eggplant, ginger, shallots, garlic, chilli, turmeric, cardamom, garam masala and curry powder. Saute for 4 mins.
  2. Add lemon Juice, stock, baby spinach, zucchini and cauliflower. Simmer uncovered for 20-25 mins.
  3. Gently fold through ricotta and serve immediately
