Sweet Vegetable Curry

Ingredients (Serves 4)

- Extra virgin Olive Oil, Cold Pressed
- 2 Apples, peeled, cored and chopped
- small piece fresh ginger, peeled and grated
- 4 Shallots, finely sliced
- 2 cloves garlic, peeled and crushed
- 1 green Chilli, seeded and chopped
- 4 teaspoons Mild Curry Spice
- 1 Lemon, juiced
- 2 cups vegetable stock
- 100g baby spinach leaves
- 150g zucchini chopped
- 150g cauliflower florets, lightly steamed
- 150g baby yellow squash halved
- 300g light ricotta cheese
Directions
Cooking time 20 – 25 minutes
- In a lightly boiled heavy based large saucepan combine apples, ginger, shallots, garlic, chilli and Mild Curry Spice. Sauté for 4 minutes
- Add Lemon Juice, stock, baby Spinach leaves, zucchini, cauliflower and squash, simmer uncovered for 20-25 minutes.
- Gently fold through ricotta mixture and serve immediately.
