Tofu Kebab with Orange Garlic Butter

Preparation time 15 minutes

Ingredients (Serves 4)
Preparation time:15 mins  / Cooking time:5-10 mins

Ingredients:
I bulb garlic roasted
Zest and juice 1/2 orange
I teaspoon extra olive oil cold pressed
250 grams firm tofu cubed
150 grams yellow zucchini thickly sliced
150 grams capsicum cut into chunks
1/2 cherry tomatoes
1/4 basil leaves
1/2 teaspoon paprik
 
Method
1.Squeeze out flesh in a small bowl,add orange juice and zest and oil mix to form a thick butter
2.Marinate tofu,zucchini, capsicum and tomato in garlic mixture for 1 hour
3. To make kebabs thread vegetables into 8 skewers alternating vegetables and tofu .sprinkle with basil
4. Grill for 5 mins per side basting kebabs with garlic mixture as they cook

Whole garlic bulb
Extra virgin oil pave oil cold pressed
Sea salt
Method
1 .Slice head from the bulb of garlic on oven tray
2 .Drizzle  with olive oil
3.Roast for 30 mins at 180deg or until garlic is soft.
