Vanilla and Clove Soaked Apples with Cinnamon Yoghurt

Ingredients (Serves 4)
Preparation time 10-15 minutes

Apples:
4 Apples peeled and cored
2 Cups water
4 Cloves
1/2 Vanilla Pod, split and scraped

Cinnamon Yoghurt:
800g Plain low fat yoghurt
1tsp Ground cinnamon
2cm Vanilla Pod, Split and scraped

Directions
Apples:
1. Place apples, water, cloves and vanilla in a saucepan, bring to boil. Reduce heat to low and cook covered for 20 mins or until apples are soft.
2. Remove apples and simmer liquid until reduced by half

Cinnamon Yoghurt:
1. Mix cinnamon and vanilla into yoghurt.
2. Top with chilled apples and drizzle over liquid.

Serving Suggestion: 
Cook apples the night before and store in the fridge. Assemble breakfast in a glass jar with lid for easy transportation/breakfast on the go
